Here comes my second contribution to the carnival. There is never anything left when I make this for a large group.
Memphis Style Coleslaw
1 head green cabbage (tough leaves removed, cored, and shredded with a knife)
2 carrots peeled and shredded
1 green pepper diced
2tbsp grated onion
2cps real mayo
3/4 cp granulated sugar
1/4 cp dijon mustard
1/4 cp cider vinegar
2tbsp celery seeds
1/8th tsp ground pepper
Place cabbage, carrots, bell pepper, and onion in a bowl. Toss roughly. In another bowl mix mayo, sugar, mustard, vinegar, celery seeds, and pepper. Pour over veggies and toss well to combine. Cover + refrigerate for at least 3 hours.
