I've decided my first submission to the Carnival should be something easy that people can make for the upcoming office party season. This dip is legendary at my workplace and no get together is complete without one of the old timers bringing this in. It will be gone in a hurry so save some for yourself.
Cheesy Beer Dip
2 cps shredded cheddar cheese
2 pkgs 8oz. cream cheese (softened)
1 oz packet Ranch dip mix
1/2 to 3/4cp beer
scallions (chopped)
1 bag big hard pretzels
Combine the cheddar cheese, cream cheese and dip mix in a bowl. Gradually stir in beer until the desired consistency is reached. I usually make it thin since it will become more solid in the fridge. Garnish with onions and more cheddar cheese. Chill in the refrigerator. Serve with the big pretzels and watch the feeding frenzy commence.
