I was in need of a hashbrown casserole dish for Christmas day and I didn't have the time to scour the internet and all of the stores except Walgreens were closed anyway, so I made this up from scratch and it turned out better than I could have hoped for.
Hashbrown and Mushroom Goop Casserole
2lbs frozen cubed hashbrowns
2 cans cream of mushroom soup
8oz sour cream
10 oz mild cheddar cheese shredded
1/2 tsp freshly ground black pepper
1/2 tsp cayenne pepper
5 slices sharp cheddar
Combine the hasbrowns, soup, sour cream, and shredded cheese in a 13 X 9 baking dish. Top with broken up pieces of sharp cheddar and pepper. Bake covered at 325 for 45 minutes and then uncovered for 15 minutes. Carefully remove from oven without burning yourself on the oven, a roasting pan, etc. Yes, there is a story there. Serve.
