toasted bulgur salad w/corn and tomatoes
1 1/2 cps coarse bulgur
2 3/4 cps water
1 tsp kosher salt
1 tbsp olive oil
2 cps fresh corn cut from the cob
1 pint cherry tomatoes halved
2/3 cp chopped scallions
5 tbsp red wine vinegar
Toast the bulgur over medium high heat for 5-10 minutes or until the bulgur starts popping. Remove the bulgur from the skillet and cool. Bring water to a boil in a medium sauce pan and add the cooled bulgur. Simmer uncovered for 20minutes or until the water has been absorbed. Removed from heat and let it stand for 10 minutes.
Transfer the wheat to a bowl and cool. Cook the corn in a skillet over medium high heat, stirring often, until it becomes tender- 2-3 minutes. Cool the corn and add it to the bulgur along with the remaining ingredients. Chill well until ready to serve.
